Awakening and disseminating strategies to identify, articulate and understand the multiple factors that make up food and nutritional issues is a pressing challenge. Paying attention to the values of food, beyond nutritional issues, implies returning to an understanding of man as an omnivore, from his biological, psychological and socio-cultural origins. In this context, the consumption of food and the composition of meals depends on the ability to modify and choose, based on their individual and collective preferences, the food resources of the environment in which they find themselves.
In this fourth edition of the Ibero-American Seminar on Food and Food Culture, the focus will be on โ€˜Breakfastโ€™, the meal that opens the day for Lusitanians and Brazilians respectively. With this in mind, the event will take you on a journey through the habits, culture, knowledge and flavours of the morning foods present at this meal. Nutritional aspects will also be addressed and will serve to give sustainable continuity to the actions of the Specific Cooperation Agreement that enables the exchange of technical-scientific experiences in the field of food, nutrition and culture between UTAD and UERJ through regular scientific meetings that have been taking place since 2020. Therefore, the organising committee, together with the other partners, invite the academic community – students, researchers, technicians, teachers and those interested in the history of food, nutrition and culture – to take part in this new edition.
